I've made a lot of vegan cheese in my day. I finally perfected ricotta, and I must admit the cashew herb spread I make is amazing! Alfredo sauce is also a pretty easy to make and super delicious on rice noodles or raw zucchini noodles.
I have also had a lot of vegan cheese from vegan slices to cream cheese to beautiful artisan cheese I order at raw and vegan restaurants.
One thing has always been missing from my vegan cheese experience. A good vegan Mexican or queso cheese to smother on nachos or add into tacos. I was very, very happy to come across this recipe and holy smokes it's good! The ingredient list is incredibly short, and you won't believe how easy this is to make.

1/2 cup raw cashews soaked and drained
1 cup salsa
1 small red bell pepper chopped
2 tbsp nutritional yeast
1/2 tsp turmeric
1/4 tsp salt
Place all ingredients in a high-speed blender and blend! That's it! Heat and enjoy! Serve with tortilla chips, on top of nachos, in tacos or quesadillas or just eat with a spoon. I'll be honest, this was so good I did that a few times ;)
