Peanut Butter & Jelly Chia Pudding
I have a confession to make. I have not been eating well for breakfast lately. I’ve been hitting snooze 3-4 times, racing out of bed and running to work, usually grabbing a bagel on the way. I really just need every last minute of sleep in the morning. I know it’s completely unhealthy, but I am not and have never been a morning person. I have found I don’t even have the time to make a quick smoothie. So this week I decided I really needed to make a quick grab and go breakfast. One of my favorite breakfasts is chia pudding. My yoga studio had a cafe at one time, and they made the most amazing peanut butter chia pudding. I would bring it to work all the time. I decided to re-create it.
This breakfast is super filling and so tasty! Chia seeds are great sources of potassium, magnesium, and iron. When mixed with liquid they turn into a gel-like consistency, making them perfect for puddings and egg replacers. I have also made chocolate chia pudding that is equally delicious. You can easily google a recipe for that if you’re interested, but basically, you just substitute cacao powder for the peanut butter in this recipe and don't use any jam. I hope you give this a try. You won’t be disappointed.
Peanut Butter and Jelly Chia Pudding
Makes two servings
2 cups unsweetened plant based milk
1/2 cup chia seeds
1/4 cup unsweetened natural peanut butter (crunchy or creamy)
1-2 tsp vanilla extract
1-2 tsp local honey, agave syrup or maple syrup
A pinch of salt
2 tablespoons reduced sugar jelly or jam of choice
Whisk all ingredients together minus the jam jam in a large bowl until fully combined. Divide pudding into two bowls or mason jars if you want to make these portable. Cover and refrigerate at least an hour or overnight. Top each serving with one tablespoon of jam and enjoy!!!!
This recipe is so easy it’s ridiculous. You can also have fun with the toppings and use more peanut butter, peanuts or chocolate chips. Comment below if you try this. Have a great week everyone!
