Loaded Chickpea Salad

Before I was vegan, I loved tuna salad! It was a quick, easy and portable lunch. These days I love making chickpea salad that serves the same way. You can put it in a wrap, on bread or just eat it as is. It’s loaded with protein and fills you up. If you’re sick of green salads, give this recipe a try. I love loading mine up with lots of flavor, but you can omit or add any veggies or spices that you like! Play around with this recipe. Make it your own. Here’s a starting point and how I make mine.

 

Loaded Chickpea Salad

 

1 15.5 oz can of chickpeas

1 green onion

2 celery stalks

1/4 cup red bell pepper

1-2 tablespoons red onion

1/4 cup dill pickles

4 tbs mayo (I use Just Mayo)

1 tbs yellow mustard

1 tips dill

Salt & pepper to taste

 

Drain and rinse chickpeas. Transfer to a large bowl and mash with a fork until it reaches tuna like consistency. You can also use a food processor. Chop veggies. Add veggies and remaining ingredients to the bowl. Combine and enjoy.
